Our team

The Directors

The four Directors are friends who have a long history with, and a lot of love for, this pub. This dynamic quartet have a deep-seated knowledge of the food and catering industry as well as E2E project management, marketing and events coordination. They came together to form First Time Inns Ltd and re-open the Lord Nelson after it closed its doors in January 2016. After 6 months of lying empty, nature had started to muscle in; we have lovingly restored the Nelson back to her former glory including original stone floors in our restaurant and private dining room.

We are hands-on and you will always find at least one Director, if not two, at the pub. We're always delighted to meet and speak with our customers.

David Donohoe - Head Chef

David is our Head Chef. An alumni of fine dining restaurants including Comme Ça, Itchenor Yacht Club and the 4* Goodwood Hotel & Country Club, Dave worked for 13 years as a Chef for Newark International Showground. Dave devised and cooked menus for a huge range of events; from sportsman’s dinners for Ricky Hatton & Zara Phillips, to Waitrose’s AGM, the Newark & Notts County Show Committee Presidents Luncheon and external catering for the Osberton Horse Trials. Producing beautiful, fresh food, Dave is committed to sourcing the finest local ingredients and leverages an extensive network of long-standing suppliers. He’s an experienced manager and an excellent mentor of young culinary talent; previous trainees have gone on to work at Jamie Oliver’s Fifteen and Rick Stein’s Fish & Grill.
Dave has three beautiful children - Grace, Max and Mason - and is a keen fisherman.

Emilie Clark - Finance

Emilie has seven years experience as a project manager, most recently launching a new venue in Southampton with the largest food and beverage offering in the bingo industry. Em also worked at the Newark Showground within the catering team for 10 years and provides invaluable knowledge and support for us as a new venture start-up. Em is also one of the nicest and calmest people you could hope to meet, coupled with an inimitable work ethic. Emilie is Dave's partner, and she and Oli are bezzie mates.


Oli has been coming to the Lord Nelson since she was a member of the Collingham Young Farmers, and has returned to her Lincolnshire YellowBelly roots after an international HR career during which she worked for Citi, BT and Google, and lived in in New York, Singapore and Ireland. Oli is currently Director of People & Culture at Medallia; she's a passionate cook, equestrienne and long distance swimmer. Pictures of her miniature horse, HRH Princess Bumble, look down from the pub walls.

Martyn Cox - Catering & Estate

Martyn is our General Manager and Front of House. He trained as a chef at Belvoir Castle and has been running his own Nottinghamshire-based, UK-wide catering and venue management company “Every Occasion Catering” for the past 5 years. At just 29 years of age, his business runs six venues across Notts and Lincs and he oversees a team of 50, supporting weddings, parties and corporate events. From intimate dinner parties to Scouting for Girls concerts, nothing ruffles Martyn’s feathers. We owe a huge debt to Martyn’s partner, Andy, who worked tirelessly to get us launched on time; there is literally nothing this man cannot do. Our awesome pub dog, Bertie, belongs to Martyn and Andy.

Our Chefs

Dave is supported by three talented chefs.

Dom Lillicrap - Sous Chef

Dom graduated from North Notts College with an NVQ in Professional Catering and completed his apprenticeship at the Eyre Arms in Rampton, and the Riddle Arms. We've been lucky enough to snaffle him to be our Lord Nelson Sous Chef.

Joey Hopkins - Commis Chef

Joey is another alumnus of Newark Showground after which he spent 2014 travelling and working in The Fifth Province restaurant in Melbourne. Returning from Australia, Joey was Eden Hall's Chef de Partie and now works at The Lord Nelson part-time alongside running his own business. He is a keen football player.

Zach Morton - Chef de Partie

Zach trained for three years at Grantham College, achieving his NVQ in catering, before gaining work experience at the Hotel Olympia in Valencia, Spain. He worked at Paul's Restaurant, Bottesford before becoming the Head Chef at the Picture Cafe in Grantham. Zach is a gym bunny and likes going to gigs.


Emma Binch

Emma is a chef, restaurant manager and qualified trainer with over 20 years experience in the catering industry.
She first came to the Nelson 14 years ago when she and her partner Colin were Managers. Emma studied at
Brackenhurst Colllege for a Diploma in Business Studies and an NCCRS. In her younger days she won a
cheese-making competition for a cheddar with chive and garlic. She loves horses and is a BHSAI.

Team Leader

Rachel Cammack

Our first appointed Team Leader in recognition of her general awesomeness was Rachel (sister Hollie also works with us).
Rachel is currently studying for a degree at Bishop Grosseteste University in Lincoln.

We are lucky enough to have a superb team supporting the Lord Nelson, many of whom live in Winthorpe village.

Estate Management team

With our huge Victorian walled garden, signature hanging baskets and private dining room, it takes an amazing team to keep the place shipshape and shiny. We are lucky enough to be able to leverage the expertise and efforts of Andy, Lawrence and Jill.
